All About Menudo

 
 

Love it or hate it (or haven’t tried it yet!), here are all of your menudo questions answered.

What is Menudo?

Simply put, menudo is a beef tripe (stomach) soup or stew made with chile peppers. Menudo also goes by the names Pancita and Mole de Panza (panza means stomach or belly). It was originally created to use up all parts of the cow, even the stomach. Some versions today will include pigs’ fee or beef tongue too!

Menudo is often hailed as a hangover cure in Mexico, the hearty bowl is salty, fatty and slightly spicy. In some Mexican regions, hominy is added to the broth, while other focus solely on adding other regional chiles to the stew. Today, this soup is also served across the US, especially in the Southwest region, for just about any occasion, especially life’s biggest celebrations.

Rojo vs. Blanco

We make a rojo or red Menudo, which is more common, but there is also El Menudo Blanco. This version is made with jalapeños or green chiles, lots of garlic and hominy. The broth ends up being lighter in color, instead of being red.

Ingredients to Make a Menudo

Making Menudo can be time consuming, it takes hours to simmer the tripe until it is tender and deep flavor has developed. Tripe has to first be cleaned properly to remove any off-putting aromas, then cooked just right to not be chewy or over done and slimy.
