Sartori: The Not-So- Secret Ingredient in Our Aged White Cheese Sauce

Sartori is a fourth-generation family owned and operated company, they’re on a mission to make award-winning artisan cheese in Wisconsin with milk from local family-owned farms. We are fortunate to be able to use Sartori’s cheeses in our recipes.

With a commitment to excellence, Sartori is proud to have three Master Cheesemakers in-house making their delicious cheeses. One of their three Master Cheesemakers is Pam Hodgson, the second woman ever to hold the title of Master Cheesemaker. There are only 60 Master Cheesemakers in the US, which is not surprising considering it takes about 13 years to achieve the certification.

We use their Montamoré cheese in our Aged White Cheese Sauce. Montamoré? Is it a cheddar that tastes like Parmesan or a Parmesan that tastes like cheddar?

It’s somewhere in between. This creamy, rich white wonder is perfectly aged with just the right amount of sharpness. At Ready Foods, we love that we get to feature this aged cheddar in our White Cheese Sauce. Montamoré is made in large wheels, aged and then grated, before it is melted into our cheese sauce.

  • Aged White Cheese Sauce is made with Montamoré, an aged cheddar Wisconsin cheese that is somewhere between a typical parmesan and a cheddar.

  • Montamoré is made by Sartori, a family-owned Wisconsin cheesemaker.

  • Use favorable descriptors like “Aged” and “Artisan” when talking about the cheese.

  • The milk used to make Montamoré comes from cows on local, family-owned Wisconsin farms.

  • Montamoré is an award-winning cheese. It came in 3rd place at the 2016 American Cheese Society Contest.

  • Sartori is serious about their cheesemaking, with three Master Cheesemakers in-house.
